When it comes to baking I really struggle, they either collapse or burn and I end up throwing the whole thing away but for some reason, my Lemon Drizzle always goes right, well so everyone tells me anyway! I can't take any credit for it though, the super easy recipe I follow is from BBC Good Food but as a 'non baker' I don't have all the utensils and trays they want me to use. Instead I put the mixture in two separate round trays (I'm sure there is a more technical name for these) and hope for the best when I pop them in the oven. When they come out of the oven I make sure I prick the sponge as they say in the instructions so all the lemon soaks in and spread a layer in between so both layers stay together.
Like most people, we bake for others, my family aren't massive cake eaters or have a huge sweet tooth, but everyone loves a good lemon drizzle cake. I made this a couple of weeks ago one morning for my sisters birthday, we didn't have any candles so I made these little flags out of cute wrapping paper and cocktail sticks whilst I waited for the sponge to cool. This was probably my favourite part of the baking process!
